Stay-cation: Day 5

Let me start off by saying that I wish I could spend my days like this. Life is rough, isn’t it?

But alas – life as a person just doesn’t work that way. At least for most.

I had a fairly productive day 5 of my stay-cation. I spent some time in the kitchen cooking. I worked on my Project 365. And I even tried to take a little nap to see if it would make me feel better. The only problem was that I waited until 3:00pm to lay down. And I couldn’t really relax and take a good nap for fear that I wouldn’t wake up in time to go pick up Miss B. Surprisingly though, the little bit of catnap I did get helped me feel a little better.

As for my cooking projects – first up was Chicken Tortilla Soup. Here is the cast of ingredients (plus 2/3 of a rotisserie chicken, diced).

I love how quick and easy this recipe is to throw together. Plus it keeps well to have as leftovers for a few days. And here is the finished product.

Next up, was an Orrecchiette Pasta with Italian Chicken Sausage. I totally winged it on one – trying to keep is simple.

Here is the finished product. It didn’t turn out quite as I had hoped. It was okay, but definitely needed something.

Or maybe my taste buds were off because of this head cold. I don’t know. Maybe I’ll try adding some fat-free half and half and parmesan cheese.

So, that was my Day 5. Not that exciting, but somewhat productive. I’m still hashing out what to do today. The weather looks like it will be nice. But time-wise, I have a “short” day as I need to pick up Miss B early from school. We’ll see where the day takes me. Have a good one!
