Minestrone Soup

I've had a craving for minestrone soup for a couple of weeks. Earlier this week, a friend of mine (not knowing about my craving) posted a recipe called "Hunter's Minestrone", and I've been thinking about minestrone every day since. So, since it is the weekend - when I like to do most of my cooking anyways - I decided to try out this recipe. I did make a few tweaks; one being cutting the amount of chicken stock in half. I ended up with over 1/2 a stockpot of soup as it was. We would have been eating minestrone for weeks. The other main tweak I made was the beans. When we stopped at Whole Foods to pick up the ingredients I needed, they were completely out of stock of cannelini beans. It was very weird because every other kind of bean was stocked full. But there was not a single can of cannelini beans. Anyways, I substituted 2-15 oz cans of white beans that I had in the pantry.

Overall, I'm pretty pleased with how it came out. I only had a little taste since it was 9:30pm or so by the time I finished. The true test will be tomorrow when I can serve myself up a full bowl. On another note, tomorrow I am taking a cooking class at Sur La Table on how to make croissants. I'm pretty excited because I love the idea of making them for breakfast with eggs wrapped in them. Or even better yet, using my Dove chocolate to make dessert croissants. Have a good night and I'll report back on the class tomorrow.
