Hey there! Just a quick post today to tell you about the Cupcake class I took on Saturday. Overall, two thumbs up. Of course, it already had one thumb up just for being about cupcakes. But it was an afternoon well spent. We learned how to make 4 different types of cupcakes: Pumpkin with a Maple Cream Cheese frosting; Carrot with Orange Cream Cheese frosting; Strawberry with a Strawberry Buttercream frosting; and a quick Chocolate cupcake with Chocolate Ganache frosting.
My overall favorite for the day was the Pumpkin cupcake with maple cream cheese frosting, garnished with chopped pecans. The chopped pecans are what brought this already good cupcake to a whole new level. I will definitely be making up some of these soon.
I also thoroughly enjoyed the Orange Cream Cheese frosting and the Strawberry Buttercream frosting. Too hard to pick just one because they are both big winners for very different reasons. First, the Orange Cream Cheese frosting. Have you ever had those Pillsbury Orange Cinnamon rolls? The frosting we made tasted just like the frosting that comes with the Pillsbury rolls, but better. It may not be a good thing that I now know how to indulge in that guilty pleasure.
Then, the Strawberry Buttercream. By far, some of the best buttercream frosting I have ever tasted. It was so light and refreshing – and no butter slick afterwards (you know what I’m talking about). Plus we garnished with chopped strawberries on top of the frosting. Super yum! And again, may not be a good thing to know how to make. But whatever. These were all good things to add to my recipe arsenal and a class well worth taking.
