Cooking Day

It's been awhile since I posted about any of my cooking ventures. Primarily because I haven't done any serious cooking or baking of late. Things have been so busy that I just haven't felt the mojo. Well, I finally felt "in the mood" yesterday and had a mini cooking marathon. First up was my special spaghetti sauce.



And then I moved on to ebelskivers. Have you ever heard of ebelskivers? Oh my - these are our new favorite things. I've had my eye on the special pan for at least 6 months. And I finally caved and bought it this weekend. No regrets whatsoever. This pan will be getting A LOT of use in our house. I test ran making plain, jam filled, and cheese filled one on Saturday. And then yesterday, I progressed to potato with green onion and bacon. They turned out so good, if I do say so myself. Serve them up with a little sour cream and applesauce. Super simple version of potato pancakes.

I can't way to experiment with other fillings - the possibilities are endless. Hope everyone had a really nice Easter. And have a great week!
